Scotlynn is a freight logistics company based in Ft. Myers, FL and they are very successful. In their new HQ, they wanted to provide their employees and guests with a nice, comfortable, pleasant and efficient environment for on-premise commercial dining. So they came to CurranTaylor to design and implement that vision.
Their main objection to running a foodservice operation was the cost of commercial kitchen HVAC. They did not want an exhaust system (hood, ductwork, fans, fireproofing, fire suppression, the ongoing cleaning, maintenance and expense of these) and everything that goes with it, so we addressed full capability cooking using technology including: a catalytic converter in the pizza oven, high speed cooking oven, self venting eyebrow hood for an electric double deck combi oven, and retherm ovens. This greatly reduced construction costs, licensing and HVAC requirements. And talk about a compact kitchen that well serves the intended audience.
The custom serving line incorporated hot/cold wells for a variety of foods, a flat hot display shelf, soup wells, self-serve grab-n-go refrigerated merchandisers, microwaves, and an ice and water station.
